The plants are closely watched so that each bean can be picked when ripe rather than in a single harvest. Maturity is determined by the bean’s size, color and feel. Ideally, it should be yellowish and firm to the touch. Perfectly ripened beans contribute significantly to the vanilla’s final flavor and potency.

It takes 3 years for a new vanilla vine to produce beans and it will go on blooming for at least 10 years if well maintained.
In order to deter thieves, each bean is "stamped" by the grower with pins producing an original pattern which will remain visible even after the bean has been cured.
When harvested, green beans (or "green vanilla") have not yet developed any of their characteristic aromas. This will only be obtained after a complex and patient curing.
