The following day they are again laid out in the sun then rolled up in the sacking for the curing process to continue. This is repeated for several weeks on end, during which the beans are constantly sorted, according to level of dryness or size and depending on whether they are split open or not. When sufficiently dry they are removed from the sun and go on drying in the shade.
Finally, once the vanilla beans have dried enough they are sorted into bundles of equivalent size and quality. The bundles are then packed into metal boxes - lined with wax paper - of about 17.65 pounds (8 kilograms) each.
